Awesome Spicy Wings
This is a great recipe for Asian flavor wings. Since I currently refuse to fry anything in my house, the recipe calls for grilling the wings. Preferably on charcoal. If you are a wing connoisseur, and veto the recipe out of spite, hear my case.
The are lots of ways of cooking wings. I have had them cooked in a slow cooker, a grill, an oven, and a fryer and they are all good, in different ways. With that being said, grilling can still create a crispy wing if done at the right temperature, hot. Here it is
Step One: Prep and Marinade
Cut the wings apart if they have not been done so yet. Try different techniques to separate the wings. Wash well and pat dry. Marinade in:
- 1 cup Sriracha hot sauce
- ½ cup louisiana hot sauce
- 4 cloves garlic minced
- 1 tbsp minced ginger (optional)
- 2 tbsp butter
Let all of this cook in a sauce pan to combine flavors. Let cool and pour on wings in a pan or in a zip top bag. Marinade 1 hour.
Step Two: Grill
Put wings on a hot grill around 400 F. They will only need a few minutes on each side.
Step Three : Sauce
Simmer the remaining marinade for 2 minutes in the sauce pan to remove any uncooked chicken particles. Top the remaining sauce on the wings. Add chopped scallions.
Dipping Sauce:
- 1 cup sour cream
- ½ cup chopped onion.
- 8 oz. Gorgonzola or Blue Cheese crumbles
- fresh herbs (Parsley works well)
- salt and pepper to taste
Mix all of these together in a bowl. Chill 1 hour. Extra can be used as veggie dip.
