How To Buy Fish

I know there is a lot to know when you buying fish to cook at home. Here is a guide to help anyone choose a good fillet.

Step One: Know where the fish comes from

First thing to realize is that most of the fish you find in the market is farm raised. These species of fish are grown on farms and are shipped all over the region. While wild caught are much more flavorful, they are much more expensive to buy. I recommend asking your fishmonger where it comes from if you do not already know. Find a good fishmonger and pay the extra, especially if you are making sushi. This fish must be sushi grade.

Step Two: What does it looks like

Second thing to know is what good fish looks like. The fish should not smell fishy, but like sea water. Look for clear eyes in the fish, translucent surface, and no spots. I will say that some frozen fish comes second to multiple days out of the water. If fish is frozen rapidly after catching it will maybe loose some flavor, but not as much as one caught and shipped to your megamart where it may sit way too long. Make sure the monger stores the fish at 33º F if not frozen.

Step Three: Storing

Make sure you consume the fish the day you buy it or the next day. Frozen fish will last close to a month in the freezer. Keep the fish on ice in a bag or in a compartment in your refrigerator to keep around 33º F.
